Momma's {Quick & Easy} Blueberry Cobbler

- 3-3.5 C. blueberries {about 2 pints}
- 1 Tbsp. fresh lemon juice
- 1 C. flour
- 1 C. white sugar
- 1 tsp. baking powder
- 1 egg, beaten
- 6 Tbsp. butter, melted
- ¼ tsp. cinnamon
- 1 Tbsp. light brown sugar
- Rinse blueberries and drain. Place in bottom of 10 x 6 glass (or Pyrex) baking dish.
- Sprinkle with lemon juice.
- Mix the next 4 ingredients with a fork until it resembles cornmeal {it will be lumpy}.
- Distribute the flour mixture over blueberries. Drizzle the top with butter.
- Combine the cinnamon and sugar. Sprinkle on top.
- Bake 35-40 minutes in preheated oven at 350 degrees F. Do not over bake.
- Sauce will continue to thicken as cobbler cools. Serve with ice cream, if you’d like.
