Momma's {Quick & Easy} Blueberry Cobbler

Ingredients
  • 3-3.5 C. blueberries {about 2 pints}
  • 1 Tbsp. fresh lemon juice
  • 1 C. flour
  • 1 C. white sugar
  • 1 tsp. baking powder
  • 1 egg, beaten
  • 6 Tbsp. butter, melted
  • ¼ tsp. cinnamon
  • 1 Tbsp. light brown sugar
Instructions
  1. Rinse blueberries and drain. Place in bottom of 10 x 6 glass (or Pyrex) baking dish.
  2. Sprinkle with lemon juice.
  3. Mix the next 4 ingredients with a fork until it resembles cornmeal {it will be lumpy}.
  4. Distribute the flour mixture over blueberries. Drizzle the top with butter.
  5. Combine the cinnamon and sugar. Sprinkle on top.
  6. Bake 35-40 minutes in preheated oven at 350 degrees F. Do not over bake.
  7. Sauce will continue to thicken as cobbler cools. Serve with ice cream, if you’d like.
