This quick and easy blueberry cobbler makes a great summertime dessert! This blueberry cobbler may not be the healthy, but it’s delicious!

Blueberries are one of my very favorite fruits, so you can imagine how much I am enjoying blueberry season this summer. The kids and I even went along with some friends to go blueberry picking last week and had a total blast picking {and eating} fresh blueberries for ourselves.
Since we were hosting friends that same night, I decided to bring out my Mom’s blueberry cobbler recipe and make some dessert for the group. It had been a while since I’d made that recipe, so I couldn’t remember much except that I had liked it and it was easy.
Well, after taking a few bites, I can tell you that it’s still good and still easy. I thought I’d share it here in case anyone is looking for another way to use up some of your blueberries this summer.
Ingredients:
1 Tbsp. light brown sugar
Directions:
Rinse blueberries and drain. Place in bottom of glass baking dish (I use Corningware and it works fine).
Sprinkle with lemon juice.
Mix the next 4 ingredients with a fork until it resembles cornmeal {it will be lumpy}.
Distribute the flour mixture over blueberries. Drizzle the top with butter.
Combine the cinnamon and sugar. Sprinkle on top.
Bake 35-40 minutes in preheated oven at 350 degrees F. Do not over bake.
Sauce will continue to thicken as cobbler cools. Serve with ice cream, if you’d like.

- Combine the cinnamon and sugar. Sprinkle on top.
