I decided to do a little Pinterest research last Sunday evening, in hopes of finding a yummy yet frugal recipe to add to my arsenal. Menu planning can be tough when you are on a budget. I found one that seemed fairly simple and it turned out to be quite yummy, so I thought I’d pass it along.
Chicken & Rice (serves 6-8)
Weight Watchers pts. = 5
2 boneless chicken breasts
1 can Cream of Mushroom soup
1 can Cream of Chicken soup
1 can water
2 packets of onion soup/dip mix
2 C. instant rice
1. Mix cream of soups, 1 can of water, instant rice, and 1 packet of onion soup/dip mix in a mixing bowl.
2. Spread creamy rice mix into a greased 9×13 pan.
3. Cut your chicken into chunk size and add to the pan. Then sprinkle remaining packet of onion soup/dip mix over chicken.
4. Cover with foil and bake at 350 degrees for 30-40 mins.
I love the fact that the few ingredients are mostly pantry staples in our home. Also, I love that you don’t have to cook/boil/roast the chicken beforehand. Easy peasy! I served it with green beans and a roll.
