{Night Before} Breakfast Casserole

Breakfast casserole is a hit in our home. It's easy to make and very affordable!

I originally planned to share this recipe for breakfast casserole before Christmas, but since it didn’t happen like I had hoped, I wanted to share it now in case you are looking for a breakfast recipe to enjoy on New Year’s Day.

There are a couple of reasons why I love this dish.  First and foremost, it’s delicious!  Breakfast food is my favorite, so anything with breakfast ingredients is going to taste super yummy in my opinion.  This recipe fits that bill perfectly.

Secondly, this is a super easy recipe that can be prepared ahead of time {hence the “night before” part of the recipe title} or can be cooked right away.  I’ve done both!  Either way, it’s simple to make and is a great go-to breakfast recipe when you have company over and don’t want to spend a lot of time in the kitchen.

Rather than talk on and on about how yummy and easy it is to prepare, let’s just get to the important stuff…the recipe!

To get started, you will need breakfast sausage, white bread, eggs, cheddar cheese, dry mustard, salt, and milk.  All fairly basic ingredients, right?

This breakfast casserole is really easy to make and will be ready to go in practically no time at all.  Start with browning and draining the sausage.  Spread the cubed white bread on the bottom of a 9 x13 oblong baking pan*.  Use cooking spray* if your pan is not non-stick.

Next, layer the cooked sausage over the bread.

Then, layer the shredded cheese.

Beat eggs, salt, mustard, and milk with a whisk* and pour mixture from batter bowl* over other three layers.

Cover and refrigerate overnight, if serving the next day. If you plan to eat immediately, bake uncovered at 350 degrees F for 45 minutes.

{Night Before} Breakfast Casserole

Cook time:  45 mins
Total time:  1 hour
Serves: 6-8
 
Ingredients
  • 1 lb. sausage
  • 9 slices of cubed white bread
  • 8 large eggs
  • 1 C. grated cheddar cheese
  • 1 tspn. dry mustard
  • 1 tspn. salt
  • 2 C. milk
Instructions
  1. Brown sausage and drain.
  2. Put cubed bread on bottom of 9 x13 oblong baking pan. Spray with cooking spray if your pan is not non-stick.
  3. Layer sausage over bread.
  4. Layer cheese over sausage.
  5. Beat eggs, salt, mustard, and milk with a whisk. Pour mixture from batter bowl over other three layers.
  6. Cover and refrigerate overnight, if serving the next day. (you can skip to #7 if you plan to eat it immediately)
  7. Bake uncovered at 350 degrees F for 45 minutes.
